Bibim Bap!

Most people like Korean food once they have it.  Like most ethnic foods (meanig non-American), Korean food is based on “what can we do with what little we have so that we can survive.”  There are lots of stews and soups and pickled “things” involved prepared in ways that stretch the ingredients to fill the tummy.

When you go to a Korean BBQ restaurant, you are typically not eating “authentic” Korean food.  You are eating an Americanized, sweetened, salted, and gluttonous version of authentic Korean food.  Not to say that it’s a bad thing, I actually like Americanized Korean food!

One of my favorite Korean dishes is Bibim Bap.  In most restaurants, you typically have rice mixed with different veggies and pieces of BBQ meat and hot sauce that you mix up in a bowl.  The types of veggies, meat, and sauce they use are generally the same between restaurants, with only slight variations.  However, Bibim Bap does not have to follow a strict recipe.  All it is is a mixture of leftovers with rice.  Anything you’ve got in the fridge.  With hot sauce.  “Bibim” means “mix” and “Bap” means “rice”.  Just make sure the sauce is good!

I felt compelled to take this picture because I loved the vibrant colors of the ingredients.  I just threw together some leftover side dishes that I found in the fridge, popped on a fried egg, and dumped in some hot sauce.  You pretty much can’t go wrong with watever you put in.  Yum yum!

Sorry, I just couldn’t resist.  Three days of Easter joy this year.  It all started with Lana coloring eggs for the first time on Friday!

As you can tell, she was very eggs-cited!!!  har har. 

It’s like a science project!

And the finished products:

Only one casualty.  Not bad!

Then Saturday it was off to hunt some Easter eggs at Albertsons!

“Albertsons?  Like the grocery store?”

Yup, that’s the one.  They had a small egg hunt for little kids.  Hey, it’s close, convenient, and did I mention it’s close?  Like right across the street?  We would have walked, but it was soooooo windy!  So Ellie took us!

Typically the rabbit is the prey, but in this case it looks like Lana is frozen like a deer in the headlights!  Oh well, at least she was up to a photo op!

Next up it was time for some shopping at Colorado Mills Outlet Mall with uncle and aunty Sugs… and of course, Kallie!

The good thing is that it’s all indoors, which was a big plus considering the windy conditions!  And they have a merry-go-round!  Woohoo!

Finally, Easter Sunday arrives, and Mommy has to leave early to help out at Church.  So Daddy gets to get Lana ready to go out!  Breakfast, a little play time, teeth brushing, dressing, and hair-doing!  This is what happens when Daddy does the hair:

And after church, the weekly dimsum lunch, and then another egg hunt at home!

What a fun Easter weekend!  Next year we’ll have a little brother to find eggs with!

Yup.  Our journey to the suburban side is now complete.  Welcome the newest addition to the family: “Ellie” – short for White Elephant!

“What kind of name is that?  White Elephant?  Not White Lightning?  Or White…”

Uh huh, white what?

I think the name is perfect.  If you think about it, she’s big, she’s slow, and she’s used!  Certified Used, to be precise.  Squeeky clean; inside, outside, even the engine!  She even comes with 3 years of warranty.  Can’t beat that!  And the best part?  She looks like a Star Trek space shuttle!

No frills, cuz that’s how we roll.  We’re simple folk.

Lana calls her “big”.  She loves to suit up and go for rides in Ellie.

I think she digs the great view she gets from the big windows and added height.  She may not look excited here, but you should see when we take off!

Don’t worry Black Beauty, we still love you!  This reminds me of a joke: A black Honda and a white Toyota roll into a bar… Ahem…


Welcome home, Ellie!  I think we’ll all get along juuuuuuust fine…

Last minute dinner party… with Kallie!

Congratulations to Lance and Jacie, what a beautiful baby girl!  Kallie was born a premie but you wouldn’t be able to tell it now at about 2 months old.  Here she is smiling in her sleep.  I wonder what she’s dreaming about?

Dinner was great.  It was such a last minute thing, but sometimes those are the best!  Shoyu chicken, mac salad, rice, Jello, frozen custard sandwiches from Abbott’s… but Lana loved the blackberries the best!

But what everyone wanted most was to hold Kallie!

Even Lana wanted to get in on the action!  You’ll make a great older sis, cutie pie!

Here are all the ladies with their girls.  How sweet!

No matter how old you are, you’ll always be our babies… =)

Welcome back, Father Winter… Not!

Just when you thought Spring was here… after days of beautiful T-shirt weather… Father Winter makes one (hopefully) last grasp at squeezing you into his cold clutches!  Wet, heavy snow… yuck!

Lana couldn’t care one bit, though.  She was just glad to help shovel the walkway.

Let’s mark this occasion with some hand prints in the snow!

This day will forever be remembered.  Until the snow melts…

By the way, did I mention that we got some fake IDs at Chuck E Cheese?  We can use them to make a getaway to somewhere warmer!

Yet another beautiful day of weather before the snow returns tomorrow!  What to do?  Get out and have some fun of course!  Daddy stayed at home while mommy took Lana to the zoo today!  It’s a different experience everytime she goes.

This time she was a lot more interested in the animals!

I think they remind her of all the animals she sees in her books!

And they topped it off with a ride on the carousel!

Then for dinner it was off to Chuck E Cheese!  It was Lana’s first time to a Chuck E Cheese in Colorado.  This one is about 2 minutes from where we live.  How convenient!

Lana got a trip out of seeing Chuck E Cheese sing and dance!  That’s a BIG mouse!  Then it was time to have some fun!

Of all the rides and things to do, this funny little girl liked the free slide the best!

So with a full tummy and a handful of leftover tokens we went home happy and ready to dream about another wonderful day!

Another beautiful day in Colorado and we had to take advantage of it!  After our weekly dimsum lunch and Baskin Robins ice cream scoops, we decided to walk on over to the nearby park and play in the playground.  It was pretty empty at first but started to get more crowded as time went on (crowded here is something like 3 or 4 other families…).

Started off on the jungle gym… Then, wait… what is that?  Up in the sky!  It’s a bird!  It’s a plane!  It’s…


It’s… A Disney princess kite!!!  Woohoo!

After daddy got it up…

What an awesome day at the park!  Lana got a kick out of the kite!  And mommy and daddy got a kick out of watching Lana!

After the park Lana wasn’t ready to settle down at home, so we went for a bike ride!

This is the BEST bike seat ever.  I get to talk and sing with Lana while we ride around town!  We will all sleep well tonight!

Fun Day at the Children’s Museum!

After yesterday’s snow-in we just had to get out and do something today!  Did you know that this week is national bubble week?  To celebrate, we went to the Children’s Museum in Denver!

They  have all kinds of activities for all ages!  Lana loved going up and down all the stairs and slides…

…reap the bounty from the garden…

…learn about shapes…

…they even had a full size firetruck!

We got to ride along on an adventure…

Then it was off to celebrate bubble week!  They gave everyone a turn to see who could make the biggest bubbles!

After our turn we watched the rest of the show…
